Introduction
Fish and other aquatic products are among the world’s most perishable commodities. Spoilage in aquatic products begins soon after death. Fish processing technology includes the different processes and techniques employed in the post-harvest handling, processing and marketing of aquatic products from the time of harvesting to final utilization. The application of processing technology in aquatic products is aimed mainly at preventing or delaying spoilage brought about by microorganisms, enzymes, and physical or mechanical means.
